Pecan Carrot Salad Recipe

My New Obsession Carrot Salad

Makes about 4 small servings, 10 minutes plus 15 to chill, make & refrigerate up to 3 days prior to serving.

Ingredients

• 2 cups shredded carrots

• ¼ cup Prime Pecan Pieces

• ¼ cup golden raisins

• ¼ cup high-protein yogurt (Greek or Skyr)

• Kosher salt and black pepper, to taste

Instructions

  1. Combine the carrots, pecan pieces, and golden raisins in a bowl.

  2. Fold in the yogurt until everything is coated.

  3. Season with salt and pepper, taste, adjust.

  4. Chill at least 15 minutes and serve cold, straight from the fridge or packed for a picnic.
